Make the most of the last days of summer with this sparkly, ginger-y, tart lemonade! Enjoy it straight up or add a shot of tequila--not gonna lie, it's pretty great as a cocktail. I used a Soda Stream for the sparkling water, but you could easily grab a bottle from the grocery store.
Ingredients
1 medium hand ginger (about ⅓ c. peeled and grated)
1 c. sugar
6 lemons (1¼-1½ c. lemon juice)
2 c. sparkling water
Shot of tequila, optional
Instructions
Peel and grate the ginger (I always use the edge of a spoon to peel it). Combine the ginger, sugar, and 1 c. water in a small pot and bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat and let cool.
Juice the lemons.
Strain the ginger syrup into the lemon juice. Add the sparkling water and taste, adding more water or sugar as needed.
Serve over ice, preferably on a beach somewhere.
To make the cocktail: add a shot of tequila to a tall, narrow glass filled with ice. Fill the rest of the way with the sparkling lemonade.
